Post 4; Rock cakes.

But Aunt Petunia didn't know what was hidden under the loose floorboard upstairs. She had no idea that Harry was not following the diet at all. The moment he had gotten wind of the fact that he was expected to survive the summer on carrot sticks, Harry had sent Hedwig to his friends with pleas for help, and they had risen to the occasion magnificently. Hedwig had returned from Hermione's house with a large box stuffed full of sugar-free snacks. (Hermione's parents were dentists.) Hagrid, the Hogwarts gamekeeper, had obliged with a sack full of his own homemade rock cakes.(Harry hadn't touched these; he had too much experience of Hagrid's cooking.)-Harry Potter and the Goblet of Fire paperback page 28.


 

Don’t worry these cakes will not break your teeth; they are very lightly sweet and with the banana remind me of banana bread though drier and not as sweet. I think if we make these again I’ll use applesauce instead.

Rock cakes

Ingredients:
2c flour

1tsp baking powder

6Tbsp coconut oil, “butter” can be used also.

½ of a VERY ripe banana smashed

1/4c plus 1tbsp coconut sugar

1/4c dried fruit I used raisins and cranberries

1/2tsp ground ginger

1/2tsp ground cinnamon  



Method:
Preheat oven to 400F. Line a baking sheet with parchment paper, you can grease the sheet if you prefer.
Sift flour, baking powder and spices into a large bowl; rub in the coconut oil with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar, banana and dried fruit.
Add milk to dry ingredients and mix into a still dough. Drop rough heaps of mixture about 2-3 Tbsp. at a time, onto the trays. Bake for 15min or until golden cool on wire rack.

 Not related but a few weeks ago we adopted a new family member. Herman (orange tabby) was not impressed at all slowly he is warming up to Phoebe and they are very nearly friends now :) I snapped this just after I threw the rock cakes into the oven and it was too cute not to share.

    1. Thank you!! She is a sweetie. It was very hard choosing which kitten there there 15 of them, we of course fell in love with three of them. She was the only girl of the three and that was the logic my nine year old used when she declared we had to bring her home.

    1. :) I've made them before with less "regular" sugar and currents and only ginger and they were good also the coconut sugar isn't as sweet and has a bit of a caramel flavor. Which oddly enough didn't show up in the rock cakes.
