Post 6; Plum cake




The rest of Harry’s Christmas presents were far more satisfactory. Hagrid had sent him a large tin of treacle fudge which harry decided to soften by the fire before eating; Ron had given him a book called Flying with the cannons, a book of interesting facts about his favorite quidditch team, and Hermione had bought him a luxury eagle-feather quill. Harry opened the last present to find a new, hand-knit sweater from Mrs. Weasley and a large plum cake.-Harry potter and the chamber of secrets chapter 12 pg 212 hardcover.



This doesn’t make a large cake but it does make a mighty tasty one. Make sure to let cool completely before tucking in. I cut a slice to bring to my dad while it was still warm and I sampled a bite,  it was just okay however when we had some after dinner  and it was room temperature it was really lovely.   

1.5c. all-purpose flour
1c. sugar, plus a bit for sprinkling           
½tsp. baking soda
1tsp. baking powder
1c. water
1/3c. oil
1Tbsp. vanilla
2Tbsp. apple cider vinegar
4 plums I used 2 "black" and 2 yellow sliced into crescents
Cinnamon for sprinkling

 
Preheat oven  to 375F lightly grease In large bowl mix the dry ingredients, add in the wet and mix till lumps are gone. pour into prepared 9in round cake pan, arrange plum slices over the top and sprinkle with sugar and cinnamon.
Cinnamon sprinkle not shown that was a afterthought I didn't get a picture of.

                  Bake for 40 min and check to see if knife comes out clean be mindful that the cooked plum will come off on the knife so be sure it isn't that and not floury cake batter. Mine ended up going about 55 min.  Let cool.
